Home Canning Workshop with Susan Chiappini

All cooking levels are welcome in this strawberry jam class.

Susan will lead you through best practices in:

  • Selecting and preparing your fruit

  • Low sugar jam recipes

  • Necessary kitchen supplies for successful home canning.

The principles and techniques learned will easily apply to home canning of tomatoes, applesauce and other fruit jams.

Susan Chiappini is certified through the Cornell Cooperative Extension to teach home canning and makes thousands of jars of jam yearly in her work as the farm kitchen supervisor at Montgomery Place Orchards.

She holds a PhD in human physiology and has studied science and nutrition at the Medical College of Virginia and Columbia University.

In a world that moves quickly, spend a morning learning to slow down, observe closely, and transform flowers into lasting works of art.

Join pressed botanical artist Marguerite Alpert of The Flowered Press for a hands-on, two-hour workshop exploring the timeless craft of flower pressing and botanical art.

You’ll learn essential pressing techniques using a wooden flower press—yours to keep—along with Marguerite's guidance on selecting, preparing, and preserving fresh flowers. Using a carefully chosen selection of dried flowers from Marguerite's gardens and foraging trips, you’ll learn about composition and mounting techniques to design a finished piece to take home.

Bird Sketching Workshop and Walk

Join us for a fun morning sketching birds and exploring Churchtown Dairy up close!

Looking for an artistic way to tune into the signs of Spring? Join local illustrator and Alan Devoe Bird Club member Eric Losh for a Bird Sketching Workshop and Field Sketching Walk.

The first half of the workshop will be an indoor drawing session that introduces participants to the basics of bird drawing through structure and anatomy, followed by a discussion of some handy techniques for simple sketching of birds in the field.

Afterward, the group will venture outside to use their new skills as they explore the farm and gardens of Churchtown Dairy, looking for birds and sketching them along the way.

  • Workshop is held in conjunction with the Alan Devoe Bird Club

  • Beginner birders and sketchers welcome

  • This workshop is designed for adults, however, children may participate with adult supervision

  • Indoor session is rain or shine. Outdoor walk is weather-dependent

  • Bring a pencil and eraser or pen and something sturdy to draw on, such as a field pad or sketchbook

  • Binoculars suggested for outdoors

Come enjoy an afternoon of home cheesemaking in the cozy farm kitchen at Churchtown Dairy in Hudson, NY. You will participate in making yogurt, creme fraiche, buttermilk and ricotta using fresh raw milk. There will be samples for sharing and discussion of the health benefits and science behind the cheesemaking process in this hands-on workshop. All cooking levels are welcome to this natural pickling class with Susan Chiappini!

Fermented vegetables are a tasty, nutritious addition to any meal. With a little know-how, they can easily be made in your home kitchen with minimal equipment. 

Susan will cover all the basics to get you started on making a variety of naturally pickled vegetables and apple cider vinegar in this hands-on workshop. Delicious samples will be available for tasting. 

While you’re chopping and slicing vegetables we’ll discuss: 

  • health benefits of fermented foods 

  • how to avoid growth of mold and unwanted bacteria 

  • how to keep those ferments crunchy 

  • fermentation equipment for the home cook

Tales from a Nomadic Cheesemaker with Trevor Warmedahl

Author Trevor Warmedahl (aka Milk Trekker) shares stories from his debut book Cheese Trekking, with copies for purchase and signing.

Tickets ($10) for the talk can be found on Eventbrite HERE.

In this presentation, Warmedahl discusses his work with pastoral communities who focus on dairying and cheesemaking, explaining how raw milk cheeses can result from a symbiotic relationship between microbes, landscapes, livestock, and human cultures. He will elaborate on his experiences of searching for cheeses with a sense of terroir, and eating them in the places they are made, while discussing the people and communities who make them. This encourages participants to look past western conceptions about what cheese is, and rethink how we relate to dairy livestock and milk.

The event will be held in the Churchtown Dairy farm store, final image in gallery.

A pre-talk tasting will be held from 5 - 6 pm which has a seperate ticket for 50$, available through this link. The events flow together, and we encourage you to attend both for the full experience.

The talk will run from 6:30-7:30, with time for Q + A

Copies of Cheese Trekking will be available for purchase and signing, from 8:00 to 8:45.

Join us for a tasting of raw milk cheeses from Churchtown Dairy, guided by Trevor and informed by his global research of cheesemaking.

Expand your cheese consciousness with this tasting of Churchtown Dairy's cheeses with Trevor Warmedahl: cheesemaker, writer, and fermentation educator. Trevor explains his egalatarian approach to tasting and discusses basic cheese science, as we explore how the cheeses on the plate came to be. The relaxed gathering will take place in the farmhouse at Churchtown Dairy, seen in final image in gallery. Bread from Sparrowbush and cured meats from La salumina will be served alongside the cheeses. This event precedes a presentation and book signing with a seperate ticket, linked to here .
